I.   Food Choices
    A. factors affecting food choices
          1. personal preference—number one reason people choose foods is taste
          2. habit
          3. ethnic heritage/tradition—you tend to eat what you grew up eating
          4. social interactions
          5. availability, convenience and cost
          6. positive and negative associations
          7. emotional comfort—foods can influence the brain’s chemistry and the mind’s response
          8. values—religious beliefs, political views, and/or environmental concerns
          9. body weight and image
          10. nutrition and health benefits

II. The Nutrients
    A. energy and nutrients from foods are required to maintain your ‘self’; remember our bodies are constantly active on a cellular level
          1. energy— capacity to do work.

          2. nutrients— chemical substances obtained from food and is used in the body to provide energy, structural materials, and regulating agents to support growth, maintenance, and repair body tissues.

    B. nutrients in foods include water, carbohydrates, lipids, proteins, vitamins and other minerals
          1. foods also can contain other substances such as fibers, pigments, alcohol, additives, and phytochemicals
    C. the body itself is also composed of nutrients: water, fat, protein, carbohydrates, and major bone minerals; vitamins and other minerals only constitute a fraction of a pound of total body weight
    D. chemical composition of nutrients
          1. simplest of nutrients are minerals, which are chemical elements
          2. next simplest nutrient is water (composed of hydrogen and oxygen)
          3. both minerals and water are inorganic nutrients
